Self Saucing Chocolate Pudding

Chocolate Self Saucing Pudding is a classic dessert that everyone should know! One batter magically transforms into a moist chocolate cake with a beautiful chocolate sauce. Quick enough for a midweek treat, and a crowd pleaser for dinner parties.

Preparation time : 10 mins. Cooking time : 20 mins. Serving : 6-7 people.

Ingredients

Batter :

  • 1 cup – Wheat flour / All purpose flour
  • 3/4th cup – Castor sugar
  • 2 tbsp – Any oil
  • 2 tbsp – Cocoa powder
  • 1/2 cup – Milk
  • 1 tsp – Vanilla essence
  • 2 tsp – Baking powder
  • 1/4th tsp – salt

Topping :

  • 1 cup – Brown sugar
  • 1/4th cup – Cocoa powder
  • 1.5 cup – Hot water

Method

  • In a large bowl mix the batter ingredients well & transfer to well greased baking dish.
  • Mix together brown sugar & cocoa powder in a bowl & sprinkle it over the batter.
  • Before you bake the pudding , boil 1.5 cup water & pour it over the pudding ( do not mix) . Then bake it in an oven at 175’ c for 30-35 minutes. Bake till the top is fully cooked.
  • Serve it hot with a scoop of vanilla ice cream. There will be plenty of chocolate sauce in the pudding, pour some over the top . ( The sauce will thicken and soak up the cake as it cools down.)

Garlic Herbed Focaccia Bread

A traditional focaccia bread recipe with tons of topping ideas that bakes up crisp on the outside and warm and soft on the inside. Perfect for serving with soups and stews, or even for making sandwiches.

Focaccia has always been one of my favorite bakery splurges, with the crusty exterior and soft interior, plus tons of flavor from the herbs and garlic are just heavenly. The traditional Italian bread can also double as a flatbread or pizza dough but is most commonly served as an appetizer bread or side to soup or salad.

No matter how you choose to serve it, I can promise you with 100% certainty that making it at home is a thousand times better than buying it somewhere. Let’s do this!

Preparation time : 1 hour. Cooking time : 20 mins. Serving : 10 people.

Ingredients

  • 1 cup – All purpose flour / Maida
  • 1 tsp – Salt
  • 2 tsp – Sugar
  • 1 tbsp – Instant active yeast / Dry active yeast
  • 1/2 cup – Milk
  • 1 tbsp – Italian seasoning (basil, thyme, rosemary, oregano)
  • 1 tbsp – Chopped garlic
  • 1/2 cup – Onions sliced
  • 1/2 cup – Cheery tomatoes /tomatoes chopped
  • 1 tsp – Chilli flakes
  • 1 tsp – Olive oil

Method

  • Mix all the dry ingredients in a bowl & wisk till fully combined.
  • Instant active yeast can be directly added to the flour if not then dry yeast has to be bloomed in warm water & sugar before adding to the dry mixture.
  • Add half cup of milk to the dry mixture & knead for atleast 10 minutes to form dough.
  • Once it forms a dough oil the sides of the bowl and let it rest for 1-2 hours.
  • After 2 hours the dough will double in size, now knead it for few mins & spread it evenly over a oiled baking tin & poke holes into the dough.
  • Let it rest for 30 mins in the baking tin.
  • The dough will raise in the baking tin , now sprinkle a generous amount of Italian seasoning over the dough, add rest of the toppings over it along with drizzle of olive oil. Press the topping into the dough before baking.
  • Bake the bread for 15-20 minutes at 180’ in oven till crust forms over the bread.
  • Once baked cut into squares & serve with hot soup or a bowl of stew.

Rocky Road S’mores

Those of you not familiar with it will probably wonder what Rocky Road is. Scrumptious, indulgent and easy to make, it is simply a refrigerator cake composed of melted chocolate, crushed biscuits, dried fruit, etc.This gets pressed into a pan and then refrigerated until set and solid and then you can cut it into squares to eat. This is a easy snack recipe for kids as well as adults. Be sure to try it yourself!!

Preparation time : 10 mins Cooking time : 15 mins. Serving : 10 people

Ingredients

  • 1/2 cup – Granulated sugar
  • 3 tbsp – Cocoa powder
  • 1 cup – Water
  • 200 grms – Digestive biscuits ( crushed )
  • 1 cup – Marshmallows
  • 50 grms – Unsalted butter

Method

  • In a bowl mix together sugar and cocoa powder then add water to it and mix till everything dissolves.
  • Add this mixture to sauce pan and simmer till sauce thickens and let it cool for few minutes.
  • In a bowl add crushed biscuits and chopped marshmallows and mix everything.
  • Now add the chocolate mixture to the biscuits & marshmallows mixture and stir well till everything is coated with the sauce.
  • Pour the mixture to buttered cake tin & refrigerate for few hours till it hold its shape.
  • Cut into pieces & serve with ice cream.

Paneer Tikka Tacos

Paneer Tikka Tacos is creative Indian Mexican Fusion dish. Beautiful colors and bright flavors make these tasty tacos ideal for unique weeknight dinner or a large party. This recipe has cheesy cottage cheese tossed in tangy tomato sauce wrapped in roti’s along with cheese & onions. Its a easy snack that can be made in few minutes.

Preparation time : 5 mins. Cooking time : 15 mins. Serving : 6 people

Ingredients

For Marinade Sauce :

  • 1/2 cup – Thick curd
  • 1 tsp – Ginger garlic paste
  • 2 tsp – Chilli powder
  • 2 tsp – Garam Masala Powder
  • 2 tsp – Coriander powder
  • 2 tbsp – Roasted gram flour powder
  • 1-2 tsp – Oil
  • 1/2 slice – Lemon juice
  • Salt to taste

For Tikka :

  • 1 cup – Paneer (cottage cheese ) cubed
  • 1 medium – Onion chopped
  • 1/2 cup – Red capsicum/ Peppers
  • 1 tsp – Jeera / cumin seeds
  • 1/2 cup – Chopped onions
  • 1 cup – Tomato puree/ paste
  • 1/2 cup – Water
  • 2 tsp – Kasuri methi
  • 4 no – Butter roti’s
  • 1/2 – Onion rings
  • 1/2 bunch – Mint leaves ( garnish)
  • 1/2 slice – Lemon wedges

Mint Yogurt Sauce:

  • 1 tsp – Ginger chopped
  • 1/2 cup – Thick yogurt or curd
  • 1/2 cup – Mint leaves
  • 1/2 slice – Lime juice
  • 1 slit – Green chilli
  • Salt to taste

Method :

  1. In a bowl add thick curd , ginger garlic paste , gram flour ,salt & all the spices & mix well to form marinade.
  2. To it add cubed paneer , Chopped onions & capsicum & mix well and marinate it for 1 hour.
  3. In a pan heat oil & add cumin seeds , onions & sauté well till the onions soften.
  4. Once the onions are cooked add the tomato paste or puree & mix well and cook till sauce thickens.
  5. Now add the marinated mixture to the sauce & add water and mix well .
  6. Cook the sauce till it thickens.
  7. Once the sauce thickens add dried Kasuri methi leaves.
  8. For mint sauce , grind all the ingredients together & mix it with yogurt, add salt to taste.
  9. Take butter roti & spread the sauce over it , then place the paneer tikka & garnish with onions , mint leaves & lemon wedge.

Panna cotta Cheesecake

This silky vanilla panna cotta Cheesecake is just the thing to end a festive meal or any parties. lt’s rich ,creamy and just the right size to satisfy everyone. This no bake recipe is easy to make during this time with less ingredients.

Preparation time : 10 mins. Cooking time : 35 mins . Serving: 8 people.

Ingredients

Biscuits Base :

  • 10-12 – Digestive biscuits
  • 2 tbsp – Butter / Ghee (melted)
  • 2 tbsp – Castor sugar
  • 1 tbsp – Cocoa powder

Cheesecake Batter :

  • 1 cup – Homemade / store bought paneer
  • 1 cup – Castor sugar
  • 1 tsp – Vanilla essence
  • 2-3 tbsp – Thick curd
  • 1 cup – Fresh cream/ Thick milk
  • 2 tbsp – Gelatine
  • 2-3 tbsp – Chocolate cookies (crumbed)
  • 2-3 tsp – Almonds chopped

Method

  1. Crumb the digestive biscuits to sandy mixture & add melted butter, cocoa powder, sugar and mix everything well.
  2. In a mixer grinder add cheese curds or paneer , thick curd , sugar , vanilla essence & grind to form paste.
  3. Take a spring foam mould & add the crumb mixture to it , press it down so that it forms a thin layer of biscuit base at the bottom of the pan.
  4. Whip the cream till its light & foaming & mix it with the cheese batter.
  5. Pour in the bloomed gelatine ( mixed with water & heated till it melts) to the batter & mix everything till fully combined.
  6. Now pour in the cheesecake batter to the biscuit base & refrigerate it overnight.
  7. Once the cheesecake is set remove from mould & decorate with biscuit crumbs & chopped almonds.

Potato Corn Fritters

Potato Corn fritters are an instant hit among the children & can also be served as party starter. Its easy to make with only few ingredients mashed potatoes, sweet corn , spices to whip up the whole dish. This goes well with any sauce ketchup or mint yogurt dip. Be sure to try out this recipe.

Preparation time : 5 mins. Cooking time : 20 mins. Serving : 8 people

Ingredients

  • 1 cup – Boiled & mashed potatoes
  • 1 cup – Boiled Sweet corn
  • 1 tbsp – Ginger garlic paste
  • 1-2 tsp – Green chilli
  • 2 tsp – Red chilli powder
  • 2 tsp – Garam masala
  • 1 tsp – Pepper powder
  • 1 tsp – Amchur powder / Dried mango powder
  • 2 tbsp – Water
  • 1/2 cup – Bread crumbs / corn flour
  • Salt to taste

Method

  1. Heat oil in a pan , add ginger garlic paste , green chilli & sauté well.
  2. Once cooked add spices ( red chilli powder,Garam masala , pepper powder,amchur powder) sauté till its fully cooked.
  3. Then add some water & let it simmer.
  4. Add boiled mashed potatoes,boiled corn & bread crumbs & mix well.
  5. Portion into medium sized tikki & fry them till golden brown.
  6. Once golden brown remove from heat & serve with mint dip or sauce.

Cheesy Chicken Pizza

Forget delivery! Serve homemade Chicken Pizza instead. Chicken, tangy tomato sauce, mozzarella cheese, and sliced green bell pepper are just a few of the ingredients used here to dress this dish up. This recipe is easy to make in few mins & can be served as kids snack or party appetiser.

Preparation time : 40 mins. Cooking time : 30 mins. Serving : 8 – 10 people.

Ingredients

For Pizza Base :

  • 2 tsp – Dry active instant yeast
  • 1 cup – Maida / Flour
  • 1 tsp – Salt
  • 1 tsp – Sugar
  • 3 tsp – Vegetable oil ( any oil )
  • 1/2 cup – Water

For Sauce & Topping :

  • 2-3 tsp – Vegetable/ Cooking oil
  • 1 cup – Onions & Capsicum chopped
  • 3 tsp – Chilli flakes
  • 3 tsp – Garlic powder/ fresh chopped garlic
  • 3 tsp – Italian seasoning
  • 1/2 cup – Boneless chicken meat
  • 1 cup – Tomato puree/ paste
  • 2 tsp – Pepper powder
  • 1-2 tsp – Salt
  • 2 tsp – Sugar
  • 1/2 cup – Mozzarella cheese (shredded)
  • 1 no – Onion rough slice
  • 1 no – Capsicum rough slice

Method:

  1. Add instant active yeast to a bowl ( since its instant yeast it is not needed to activate it in warm water & sugar).
  2. Add flour, sugar , salt & oil to it and mix well .
  3. Knead the mix for 10 mins & then let it rest in the bowl for 1 hour in warm area.
  4. For the sauce heat oil in a pan & add chopped onions ,capsicum & sauté well.
  5. Once its cooked add spices ( chilli flakes , italian seasoning, garlic powder) mix everything well.
  6. Add the chicken meat to it & sauté well.
  7. Once the meat is cooked add tomato purée to it & cook it for few mins before adding sugar & salt to taste.
  8. Add pepper powder to it & mix well.
  9. Cook the sauce in low flame for 10 mins till it thickens.
  10. The dough will double up in size after 1 hour , roll out the dough into 1 inch thick pizza base.
  11. Poke the base with fork to form holes so that the base doesn’t puff up while baking.
  12. Pour in the chicken sauce over the pizza base & spread evenly throughout.
  13. Add shredded mozzarella cheese over it.
  14. Then add chopped onions & capsicum over the sauce & finally sprinkle with some more cheese.
  15. Cook it in oven @ 180’ for 30 mins & in microwave for 35 mins in bake mode.
  16. Once cooked sprinkle the pizza with chilli flakes & seasoning.

Lemon Drizzle Cake

This recipe is one of my all time favourite cakes. Tangy lemon syrup soaked fluffy cakes are instant hit in any parties or events even kids love these cake. This is an easy version of lemon cakes which can be made by everyone in simple & easy steps.

Preparation time : 10 mins Cooking time : 30-40 mins Serving : 8-10 people

Ingredients

For Cake :

  • 1 cup – Flour / Maida
  • 1 tsp – Baking powder
  • 1 cup – Granulated / Castor sugar
  • 50 grms – Unsalted Butter
  • 50 ml – Oil (Any oil )
  • 2 no – Eggs
  • 1 tsp – Lemon zest ( outer skin of lemon)
  • 2 tsp – Lemon juice

For Lemon Syrup :

  • 3 tbsp – Castor sugar
  • 3 tbsp – Lemon juice

For Candied Lemon :

  • 2 no – Lemons
  • 4-5 tbsp – Castor sugar
  • 2 tbsp – Water

Method

  1. First mix the dry ingredients together flour/ maida , baking powder.
  2. Then add sugar to a bowl with butter & whip the mixture till it turns pale & fluffy.
  3. Once the sugar & butter mixture is light & fluffy add oil to it and mix well.
  4. Beat the mixture well then add the eggs , lemon zest & lemon juice & mix well.
  5. Now add the dry ingredients with flour to the egg mixture & mix well till everything is fully combined.
  6. Mix everything till it comes to batter consistency.
  7. Grease a cake pan with butter.
  8. Pour in the cake batter into the pan & bake it in oven at 180’ for 30 mins , if microwave set it to baking mode for 30 mins.
  9. Once the Cake is cooked poke it with holes over the entire cake surface.
  10. Mix 3 tbsp lemon juice with 3 tbsp sugar to form lemon syrup & drizzle it over the cake.
  11. Heat sugar & water to form syrup then add in sliced lemon into it & cook for 10 to 15 mins .
  12. Once cooked remove from heat & let it rest.
  13. Decorate the cake with candied lemons.

How to make :

1 cup Maida / Flour
1 tsp Baking powder
1 cup Granulated sugar
50 grms Butter
Mix well
50 ml oil
2 Eggs
1 tsp Lemon zest
2 tsp Lemon juice
Poke holes over the cake surface
